Signature Spicy/ Sweet & Savory Barbeque Pork Ribs

Treat your friends, family and yourself with Special Barbeque Pork Ribs this Christmas.

INGREDIENTS

1 pack 500g Dry-rubbed Pork Ribs (included in Barbeque Pork RIbs set)

1 box Signature Spicy/ Sweet & Savory barbeque sauce (included in Barbeque Pork RIbs set)

1 Large Stock Pot

1 Non-stick baking sheet

1 Pastry/ Silicone Brush

Parchment paper 

Instant thermometer (optional)

PREPARATION

A Night Before
Bring the pork ribs and sauce box down to fridge compartment and defrost overnight. DO NOT open up the ribs pack.

On Cooking Day

  1. Pre-heat oven at 200 deg.c (with fan) or 220 deg.c (without fan).
  2. Adjust baking rack to top rack position.
    Tips: Keep a distance so that the meat would be of at least 1.5 inch away from heating coil to avoid burning too fast
  3. Fill stock pot with water. Water should be enough to submerge the whole ribs pack. Bring water to boil. (Do not place ribs pack in water at this point yet!) 
  4. Once boiled, lower heat to gentle simmer, water temperature should be about 93-95 deg.C. 
  5. Without opening up the ribs pack, submerge the whole ribs pack into hot water and cook for 20 minutes, or until meats are slightly pulled away from bones, about 1 to 3mm. Remove ribs pack from hot water.
  6. Line a baking sheet with parchment paper. Open up the ribs pack, remove and place the pork ribs onto lined baking sheet. Keep the meat juice from ribs pack in a separate bowl.

Dry-ing the Ribs

  1. Turn ribs so the meaty side is up. Brush pork ribs with meat juice. Place ribs at top rack in oven and bake for 5 minutes to dry.
  2. Remove ribs from oven. Flip ribs so the bonier side is up, then brush with meat juice. Place ribs back into the oven at top rack and bake for another 5 minutes to dry.
  3. Remove ribs from oven.

Sauce-ing the Ribs

  1. The bonier side should be up now, else turn ribs to make bonier side up. Brush with Signature Spicy/ Sweet & Savory barbeque sauce. Place ribs back into the oven at top rack and bake for 10 minutes or until the edges are nicely browned (We did 12 minutes as we like more burnt edges).
  2. Remove ribs from oven, then flip ribs so the meaty side is up now. Brush with Signature Spicy/ Sweet & Savory barbeque sauce. Place ribs back into the oven at top rack and bake for another 10 minutes or until edge are nicely browned (similarly, we did 12 minutes for a little more burnt edges)

Serving the Ribs

  1. Remove the ribs from oven. Let rest for at least 5 minutes.
  2. When you are ready to serve the ribs, cut ribs in between the bones into individual portions and serve.
