1 pack 500g Dry-rubbed Pork Loin (included in Barbeque Pork Loin set)

1 box Pura Vida sauce (included in Barbeque Pork Loin set)

1 box Molasses sauce (included in Barbeque Pork Loin set)

1 Large Stock Pot

1 Non-stick baking sheet

1 Pastry/ Silicone Brush

Parchment paper

Instant thermometer (optional)

A Night Before
Bring the pork loin and sauce box down to fridge compartment and defrost overnight. DO NOT open up the loin pack.

On Cooking Day

  1. Pre-heat oven at 180 deg.c (with fan) or 200 deg.c (without fan).
  2. Adjust baking rack to top rack position.
Tips: Keep a distance so that the meat would be of at least 1.5 inch away from heating coil to avoid burning too fast
  3. Fill stock pot with water. Water should be enough to submerge the whole loin pack. Bring water to boil. (Do not place loin pack in water at this point yet!)
  4. Once boiled, lower heat to gentle simmer, water temperature should be about 90-95 deg.C.
  5. Without opening up the loin pack, submerge the whole loin pack into hot water and cook for 20 minutes (Internal temperature at loin center should be 125 deg.F)Remove loin pack from hot water.
  6. Line a baking sheet/tray with parchment paper. Open up the loin pack, remove loin and lightly rinse off spices & marinates under filtered water. Place the pork loin onto lined baking sheet.

Painting the Loin

  1. Divide loin into 2 by cutting at center lengthwise.
  2. Brush loins on all surfaces with Molasses sauce (dark colored, included in Pork Loin set).
  3. Place loins into the oven at top rack and bake for 10 minutes or until the edges are nicely browned (We did 12 minutes as we like more burnt edges).
  4. Remove loins from oven, flip side, and brush surfaces again with Molasses sauce
  5. Place loins back into the oven at top rack and bake for another 10 minutes or until edge are nicely browned (similarly, we did 12 minutes for a little more burnt edges)
  6. Remove loins from oven. At this point, internal temperature (at loin center) should be 145 deg.F. If not, replace loin into oven for another 5~10 minutes
  7. Remove loins from oven and let rest for at least 5 minutes.

Serving the Ribs

  1. Slice loin at pencil thickness (5mm~7mm).
  2. Dress loin with Pura Vida sauce (included in Pork Loin set)
  3. Enjoy!

You are now sharing the joy!

We wish you a wonderful time celebrating with loved ones and very merry Christmas!
