Easy Breakfast Sausage Burrito Recipe: Fuel Your Mornings!

This quick and protein-packed Breakfast Sausage Burrito recipe is the perfect way to conquer busy mornings!  Loaded with fluffy eggs, melty cheese, and your favorite veggies, it’s ready in minutes and keeps you satisfied all through the  morning.


2 links Breakfast Sausages (or any sausage of your choice)

3 Medium Eggs

1/2 cup Cheddar Cheese

1 small green pepper, diced

1 small onion, diced

2 tablespoon unsalted butter

1 cup shredded cheddar cheese

2 flour tortillas (we use that from Gardenia, you may use any desired)

Salt & Pepper

Hot sauce (optional)

Non-stick skillet


  1. Cook the Sausage: Crumble or slice the sausage and cook over medium heat until browned. Drain any excess grease and set aside.
  2. Sauté the Veggies: Melt 1 tablespoon of butter in a pan over medium heat. Add the onions and peppers, cooking until softened and translucent. Set aside. (Optional: Season with salt and pepper)
  3. Scramble the Eggs: In the same pan (wiped clean if needed) or a separate skillet, melt another tablespoon of butter over low-medium heat. Scramble the eggs until they are just set but still slightly moist. Season with salt and pepper to taste.
  4. Assemble the Burritos: Lay out your tortillas. Divide the scrambled eggs, cooked sausage, sautéed veggies, and shredded cheese among the tortillas. Add a drizzle of hot sauce for an extra kick (optional).
  5. Wrap it Up: Fold in the sides of the tortillas first, then firmly roll them up tightly, tucking in the ends to secure the fillings.
  6. Warm Up the Tortillas: Heat a clean skillet over medium heat. Briefly toast the burritos on each side until lightly golden brown and the cheese is melted.
  7. Slice & Serve: Cut the burritos in half (optional) and enjoy hot!
