Pan-Seared Italian Sausage with Apples and Spinach

1 tbsp olive oil
2 nos. apple, halved (we used Fuji from Tesco)
1 pack (500g) Sweet Italian Sausage
4 tbsp white wine (we used Sauvignon Blanc)
2 tbsp white wine vinegar
1 bunch spinach
Sea salt and freshly ground black pepper
Heat oil in non-stick frying pan or cast iron skillet over low-medium heat. Add apples, cut side down, sear and turning occasionally, until golden brown, about 3-5 minutes.
Add sausage to skillet with apples, sear, turning occasionally, until nicely browned, about 6-8 minutes.
Add wine and vinegar to skillet. Bring to boil, reduce heat, and simmer until thickened (it should coat the back of your spoon), about 3-4 minutes.
Add Spinach and toss to coat. Season with salt and pepper.
Spoon over pan juices and serve hot.
