[Recipe] Italian Sausage with Caponata

Refreshing, meaty, sweet and savory. This sausage recipe makes an easy sweet & savory feast with only cut, fry, and repeat.

INGREDIENTS

3 links Sweet Italian (or any of your choice)

1 small eggplant, half-inch cubed

1 carrot, half-inch cubed

1 red bell pepper (capsicum), cut into half-inch pieces

1 celery stalk, cut into half-inch pieces

1 large onion, finely diced

2 garlic cloves, finely chopped

3 tomatoes, diced or halved wedges

1 tsp fennel seed

1/4 cup tomato paste

1/3 cup red wine vinegar

2 tsp brown sugar (optional)

3 tbsp olive oil (or any cooking oil of your choice)

1 tbsp unsalted butter

Salt & pepper

Chopped fresh parsley or dried, for garnish

PREPARATION

For Sausages
Defrost sausages in fridge overnight or dip sausages (in packaging) in a bowl of water 30 minutes before cooking.

Coat sausages with a little cooking oil. Heat skillet over low-medium heat, cook sausages until nicely browned, about 6-8 minutes. Flip every other minute. Remove and let rest.

For Caponata
In the same skillet (keep the sausage grease if you like a little more fragrant), heat 2 tablespoons oil in non-stick skillet over medium heat. Add eggplant and cook, turn every other minute, until soft. About 10-12 minutes. Remove from heat and set aside.

Wipe skillet with kitchen towel. Heat skillet over low heat. Toast fennel seeds until fragrant.

Without removing the fennel seeds, heat 1 tablespoon oil and butter in the same skillet. Add carrot, red bell pepper, celery, onion, and garlic. Cook until softened and slightly browned, about 10 minutes. Add egg plant and tomato paste. Stir to ensure bveges are evenly coated by tomato paste.

Add vinegar and simmer for 1-2 minutes. Add tomato and sugar, and cook for another 1-2 minutes. Season with salt and pepper to taste. Add 1-2 tablespoons of hot water if too thick. Remove and set aside.

To Serve
Serve by topping sausages with caponata, or any way you like, e.g. pair with pasta, baguette, make bruschetta, make sub and etc.
