Roasted Kielbasa Tacos

1 red onion, slice into 1 inch wedges
2 red bell peppers, cut in 1 inch wide strips, seed removed
1 bunch scallions
3 tbsp vegetable oil
Sea salt, freshly ground black pepper
2 fresh lemon
1 pack (500g) Polish Kielbasa sausage, halved lengthwise
8 tortillas (we used Mission from Tesco)
1/2 bunch cilantro
Preheat oven at 180 deg.C.
Toss onion, bell peppers, and scallions with oil on a baking tray; season with salt and pepper. Roast vegetables until lightly charred and tender, about 10 minutes for scallions and 20 minutes for onion and bell peppers. Transfer to cutting board or another baking tray as they are done; let cool.
Roast sausage, turning halfway through, until lightly charred, about 10 minutes.
Lightly char tortillas and serve warm with kielbasa, scallions, onion, bell peppers, cilantro, tabasco, and lemon wedges for squeezing over.
