This quick and protein-packed Sausage & Egg Salad recipe is your answer to delicious and versatile lunches. It's also budget-friendly and ideal for picnics or meal prep!

INGREDIENTS

3 links sausage, 1 inch sliced (we used Sweet Italian, you may sub with any of your choice)

2 eggs

1 box salad green (250g)

Kewpie sesame salad dressing 

1 tsp olive oil

Salt and Pepper

PREPARATION

  1. Cook the Sausage: Heat 1 teaspoon olive oil in a large non-stick skillet over medium heat. Add the sausage and cook until browned and cooked through, about 6-8 minutes. Flip the sausage occasionally for even cooking. Set aside.
  2. Boil the Eggs: While the sausage cooks, place eggs in a saucepan and fill with cold water, about 1 inch above the eggs. Bring the water to a boil over high heat. Once boiling, remove the pan from heat and let the eggs sit for 6 minutes for a creamy yolk or 12 minutes for a hard-boiled yolk. Run cold water over the eggs and then peel them. Slice the eggs.
  3. Assemble the Salad (Optional): If using salad greens, place them in a large salad bowl. Top the greens with the sliced eggs. Drizzle with your favorite salad dressing, and toss to coat.
  4. Combine & Serve: Add the cooked sausage to the salad bowl (or directly to a plate if not using greens). Enjoy your Sausage & Egg Salad immediately!

Tips:

  • Feel free to substitute different types of sausage in this recipe, such as breakfast sausage, Italian sausage, or chorizo.
  • For added flavor, chop some red onion or celery and mix them in with the cooked sausage before adding it to the salad.
