Sausage & Red Pepper Quesadillas

3 links sausage, with casing removed (we used Andouille, you may sub with any of your choice)

1 medium red onion, cubed

1 medium red pepper, cubed

2 cups grated cheese (we used Cheddar, you may sub with any of your choice)

2 slices tortillas (we used Garlic Tortillas from Mission, you may sub with any of your choice)

1 tsp olive oil


In a non-stick skillet, cook sausages over medium heat, breaking it up with spatula or fork, until nicely browned, about 5 minutes. Set aside and let rest for at least 5 minutes.

In the same skillet, cook red onion and red pepper until tender and browned on the edges, about 7-8 minutes. Season with salt and pepper. Turn off heat and set aside.

Wipe off any residual oil in the skillet. Heat skillet over low-medium heat. Brush olive oil on one (1) of the tortillas and put into the skillet (oiled side to face down). Top tortilla with sausage, red onion, red pepper, and cheese. Spreading the ingredients to the edge. Top with another slice of tortilla and brush oil. Turn after 1 minute and cook for another minute on the other side.

Remove from pan and serve hot with sour cream and hot sauce.
